Beef & Aubergine Bake (1st PRIZE)

INGREDIENTS

  • 700g lean braising steak
  • 1 onion sliced
  • 2 aubergines
  • 2 garlic cloves crushed
  • 1tsp cinnamon
  • 1tsp ground cumin
  • 1/2 pint beef stock
  • tin chopped tomatoes
  • olive oil
  • salt and pepper

INSTRUCTIONS

  1. Place braising steak in large chunks in a large casserole dish with the sliced onion and garlic on top.
  2. Mix together stock, cinnamon, cumin and tomatoes and pour over.
  3. Cover and bake in the oven at 160C/gas mark 3-4 for 1½ hours.
  4. Meanwhile, slice the aubergines into 1cm thick rings, brush with olive oil on both sides and grill until golden brown.
  5. After the meat has cooked for 1½ hours uncover and place the aubergines over the top.
  6. Bake for a further ½ hour.

Serve with jacket potatoes and green beans cooked in a small casserole which you can cook alongside the meat dish.
