Chilli Hot Peppers (3rd PRIZE)

INGREDIENTS

Serves 4

  • 4 Large Peppers
  • 1 Onion
  • 1 Fresh Chilli
  • 4oz Feta Cheese
  • 8 Baby Tomatoes
  • 1 tbs Extra Virgin Olive Oil
  • 1 oz Pine Nuts

INSTRUCTIONS

  1. Lightly fry the chopped onion and tomatoes in virgin olive oil.
  2. Add Chilli to personal taste.
  3. Simmer for 5 mins.
  4. Cut the tops off the peppers, remove seeds, then wash.
  5. Add the Feta Cheese, onions, tomatoes and pine nuts into the peppers.
  6. Place peppers into a suitable dish and put into the oven.
  7. Cook on gas mark 6 until golden brown.

Serve with pasta as an accompaniment.
