Tuna Delight
(2nd PRIZE)
INGREDIENTS
1 onion
Handful of mushrooms
Tin of tomatoes
1 tin tuna (in water or brine)
Teaspoon tomato puree
2 cloves garlic crushed
1 teaspoon of Italian mixed herbs
Salt and pepper to taste
A splash of hot pepper sauce
1 bag fresh penne pasta (or boil some dried pasta)
Grated low fat cheese
1 tomato for garnish

INSTRUCTIONS
Put the tinned tomatoes into a pan, add the garlic, onions mushrooms, tomato puree and seasoning and simmer for 10 mins.
Meanwhile put the pasta into an ovenproof dish, add the drained tuna to the tomato sauce then pour over the pasta.
Cover with grated cheese and sliced tomato and garnish with some sprinkled herbs and bake in the oven for 20 mins at gas mark 6/200c.
